There is a flight manual (POH) supplement that is required for flight with the utility doors removed in a Model 36 Bonanza. The Beech part number is 36-590003-7. RAPID online shows the supplement is in stock and costs $20.

Highlights of the supplement include:

-- Pitot/static calibration errors during flight with the doors removed.

-- Vne limitation to 165 KIAS (top of the green arc).

-- Takeoff with flaps extended is not approved.

-- All occupants of the aft cabin area must wear a parachute.

-- An instrument panel placard (described in the supplement) must be installed.

-- Reduce computed climb rates by 50ft/min and reduce cruise speeds by 6% for recommended power settings on cruise performance charts.

Adjust weight and balance and equipment list as follows:

-- Total door weight removed is 30 pounds with the arm of F.S. 147.

-- Third and fourth seats weigh 25 lbs each. Adjust documents if seat(s) removed.

-- Fifth and sixth seats weight 16.5 lbs each. Adjust documents if seat(s) removed.

There are a few hints as well, such as things to do to prevent aft cabin vents from blowing out, etc.

As to the FAA stuff, Bob is right. KISS. I had a 36 for 25 years and we
pulled only the aft cargo door. The starboard aft seat makes a seat-belted
place to sit and shoot and the forward cargo door staying in place keeps the
wind from raising hell. The front door only blocks the wing anyway, so
there will be few camera shots aimed forward.

It¹s an easy thing to pull the wires, but twist as you do so, and lubricate
with Corrosion X a day or even few minutes prior.
